Ingredients
- 3 cups Water
- 1 large piece Fresh ginger
- 3 tbsp Loose black tea
- 1 cup Milk
- to taste Sugar
- 3 Cardamom pods
How to cook Ginger Tea
Ginger tea is morning and evening drink across Tanzania, especially the coast and Zanzibar. Fresh ginger simmers with tea and milk, paired with mandazi or vitumbua. Bold aroma and warming on cool mornings.
- Wash ginger, slice thin without peeling.
- Put water in a pot with ginger and cardamom pods.
- Simmer medium heat 8–10 minutes until strongly fragrant.
- Add loose tea, reduce heat and steep 3 minutes.
- Add milk and sugar; bring just to a gentle simmer.
- Stir once and heat 2 minutes — do not boil hard after milk.
- Strain into cups or a thermos.
- Serve hot with mandazi, vitumbua or bread.
Tips
- Fresh sliced ginger gives better aroma than powder alone.
- Do not over-boil after adding milk or tea turns bitter.
- Cardamom adds the Zanzibar coastal note people expect.
