Ingredients
- 900 g Chicken or beef
- 2 tbsp Ginger
- 5 cloves Garlic
- 2 Lime
- 3 tbsp Cooking oil
- 1 tsp Black pepper
- 1 Fresh chili
- 1.5 tsp Salt
- 12 Skewers
How to cook Mishkaki Skewers
Mishkaki are meat or fish skewers grilled over charcoal, iconic at Dar street stalls and Forodhani in Zanzibar. Chicken or beef is marinated with ginger, lime and chili then grilled. Eaten with chips, pita or kachumbari salad.
- Cut meat into bite-sized cubes; remove bones from chicken if needed.
- Mix marinade from ginger, garlic, oil, salt, pepper, chili and lime juice.
- Coat meat, cover and marinate 1–3 hours refrigerated.
- Soak wooden skewers 15 minutes so they do not burn.
- Thread meat onto skewers leaving small gaps between pieces.
- Heat charcoal until white coals give medium heat.
- Grill 4–5 minutes per side, turning often.
- Brush reserved marinade while grilling to keep moisture.
- Cook until done — chicken no pink, beef tender.
- Serve over bread or chips with lime and kachumbari.

- Even cube size cooks uniformly and prevents burning.
- Lime-ginger marinade defines coastal mishkaki flavor.
- Do not press skewers hard on coals — turn frequently.
