- 2 cups Red beans
- 2 cups Coconut milk
- 2 Onions
- 3 Tomatoes
- 4 tbsp Oil
- 1 cup + for dough Water
- to taste Salt

- Soak beans overnight; boil until tender, drain.
- Chop onions and tomatoes; fry onions in oil until golden.
- Add tomatoes, cook to sauce; add beans and coconut milk.
- Simmer covered 30 minutes until beans are creamy and thick.
- Mix flour, salt and water into soft chapati dough; rest 20 minutes.
- Divide into 8 balls, roll thin rounds and keep covered.
- Heat chapati pan high; cook each side 30–45 seconds until bubbles and brown spots form.
- Brush a little oil when bubbles rise; flip and cook second side.
- Stack chapati in a warm cloth to stay soft.
- Serve chapati with coconut beans; add kachumbari if desired.
