- 2 cups Wheat flour
- 3/4 cup Water
- 300 g Minced chicken
- 4 Eggs
- 1 cup Kachumbari mix
- 1/2 cup Chicken mayo sauce
- 2 tbsp Oil
- to taste Salt
How to cook Zanzibar Pizza
Zanzibar pizza is Forodhani Gardens street food — not Italian pizza but a thin dough filled with salad, meat, egg and chicken sauce, griddled and folded. Eaten late at night along the island waterfront.
- Mix flour, salt and water; knead soft dough; rest 20 minutes.
- Divide into 4; roll each thin like chapati.
- Cook minced chicken with onion and spices; cool slightly.
- Place dough on medium griddle, brush with oil.
- Spread kachumbari on half, add chicken.
- Crack egg over filling, let it begin to set.
- Add chicken mayo sauce, fold other half over.
- Seal edges with fingers; cook bottom 3–4 minutes.
- Flip carefully and cook until egg is done.
- Cut into wedges; serve hot with lime and chili sauce.
Tips
- Roll dough very thin — thick dough makes a heavy parcel.
- Do not overfill before folding or it will burst.
- A cast-iron griddle gives the best Forodhani char.
