  • 1 cup Gram flour
  • 3 tbsp Tamarind paste
  • 2 Potatoes
  • 1 cup Boiled beans
  • 2 tbsp Kachri spice mix
  • 2 Onions
  • 1 cup Oil
  • 6 cups Water

How to cook Urojo

Urojo is a tangy Zanzibari and Dar street soup with tamarind, kachri spice mix and bhajia fritters. Eaten mornings and afternoons at roadside stalls, especially in hot weather. Every vendor has their own spice blend.

  1. Dice potatoes; boil in salted water until tender.
  2. Mix gram flour with water into bhajia batter; add chopped onion and chili.
  3. Heat oil, fry spoonfuls of batter into golden bhajia fritters.
  4. In a large pot combine water, tamarind, kachri and salt; bring to a simmer.
  5. Add boiled potatoes and beans; cook 10 minutes.
  6. Whisk gram flour with cold water into slurry; pour slowly into soup while stirring.
  7. Simmer until soup thickens slightly.
  8. Float bhajia on soup or serve on the side for topping.
  9. Garnish each bowl with onion and coriander kachumbari.
  10. Serve hot with lime and chili sauce for street-style tang.

Tips

  • Add gram flour slurry slowly to avoid lumps.
  • Enough tamarind defines authentic urojo tang.
  • Crisp bhajia stay best added at serving time.
