How to cook pilau — step by step

How to cook Tanzania pilau (including Zanzibar style): basmati or Sela rice, pilau masala and beef or chicken. Pilau nyama is a Friday, wedding and family classic. The steps below take about 80 minutes — toasted onions and pilau spice define the aroma.

  1. Rinse rice until water runs clear, drain well and let it dry on a cloth.
  2. Cut meat into small pieces, marinate with salt, half the pilau masala, ginger and garlic; rest 20 minutes.
  3. Slice onions thinly; in a large pot heat oil and fry onions over medium heat until deep golden and fragrant.
  4. Add remaining pilau masala (or toasted cloves, cardamom, cinnamon, cumin), toast 30 seconds until aromatic; do not burn the spices.
  5. Add marinated meat, toss with onions and cook 5 minutes until lightly browned.
  6. Stir in rinsed rice gently so every grain coats with oil and spices.
  7. Pour in hot stock, bring to a medium simmer, cover and cook 15 minutes without heavy stirring.
  8. Reduce heat, cover and steam 25–30 minutes until grains are tender and separate.
  9. Turn off heat, cover and rest 10 minutes before fluffing with a fork.
  10. Fluff gently, serve on a platter with kachumbari or a fresh salad on the side.

  • Avoid over-stirring while steaming — this keeps grains separate and fluffy.
  • Hot stock helps the rice start cooking evenly and prevents hard centers.
  • Kibongo, wakubwa, vilema or viwete are spice styles — use the same pilau masala amount listed above.

How to make pilau masala (dawa ya pilau)

  • In a dry pan, toast cloves, cardamom, cinnamon, cumin and black pepper 1–2 minutes until fragrant.
  • Cool, then grind to a fine powder — this is homemade dawa ya pilau / pilau masala.
  • Store in a dry jar; use 2 tsp for this recipe (or your preferred kibongo/wakubwa-style blend).
