- 4 cups Maize flour
- 800 g Beef stewing cuts
- 4 large Tomatoes
- 2 large Onions
- 1 thumb Ginger
- 1 Green bell pepper
- 3 tbsp Cooking oil
- 2 cups Beef stock
- to taste Salt and pepper
How to cook Ugali with Meat
Ugali with meat stew is everyday Tanzanian comfort food at home and local eateries. The stiff maize porridge is broken with the hand or a spoon and dipped into onion-tomato beef stew. Hearty and filling, it suits lunch and dinner.
- Cut meat into bite-sized pieces, salt them; in a heavy pot brown the meat in oil until golden.
- Add chopped onions, cook until soft; add ginger and garlic, stir 2 minutes.
- Add chopped tomatoes, cook until broken down; add bell pepper and stock.
- Reduce heat, cover and simmer 1 to 1.5 hours, stirring occasionally, until meat is tender.
- Season with salt and pepper; stew should be slightly thick but still pourable.
- In a separate pot, boil 6 cups water with a little salt.
- Add maize flour gradually with your left hand while stirring vigorously with a wooden spoon.
- Keep adding flour and stirring without stopping until ugali is stiff and pulls from the pot.
- Cover, reduce heat and cook 5 minutes; turn ugali with a spoon and cook until fully done.
- Serve ugali on a plate with stew on top or beside; add greens if available.

- Stew the meat slowly for tenderness — high heat makes it tough.
- Boil ugali water first before adding flour to avoid raw lumps.
- Ugali is ready when it pulls cleanly from the pot sides when stirred.
