  • 2 tbsp Grated ginger
  • 6 cloves Garlic
  • 2 Lime
  • 2 tbsp Vegetable oil
  • 1 tsp Black pepper
  • 2 tbsp Salt
  • 1 Onion for salad
  • 2 Tomato

How to cook Grilled Meat

Nyama choma is beloved street and celebration food across Tanzania, especially Dar and the coast. Goat, beef or chicken is seasoned with salt, ginger and lime then grilled over charcoal. Served with kachumbari, chips or ugali.

  1. Cut meat into even pieces, leaving some fat for flavor; larger cuts suit grilling.
  2. Make marinade: mix ginger, crushed garlic, oil, salt, pepper and lime juice.
  3. Coat meat thoroughly, cover and marinate 2 hours or overnight.
  4. Light charcoal or preheat grill to medium — white coals give steady heat.
  5. Arrange meat on grill with space for air circulation.
  6. Grill first side 8–10 minutes, turn and cook until browned with grill marks.
  7. For goat, cook until tender but not dry; adjust time by cut thickness.
  8. Rest meat 5 minutes on a board before slicing.
  9. Make kachumbari: dice onion, tomato and coriander with lime and salt.
  10. Serve on a platter with kachumbari and chips or ugali.

Tips

  • Avoid very high heat — the outside burns before the center cooks.
  • Lime and salt are the core Tanzanian nyama choma marinade.
  • Rest grilled meat so juices stay inside when you cut.
