- Put meat and bones in a large pot with water; boil and skim foam.
- Reduce heat, add chopped onions and simmer gently 2 hours.
- Peel plantains, cut large chunks and add to soup.
- Continue low simmer 1 hour, stirring occasionally.
- When plantains soften, mash with a spoon into the broth.
- Add milk gradually while stirring to avoid curdling.
- Cook another 30 minutes until soup is thick and creamy colored.
- Season with salt; flavor should balance milk and meat.
- Rest 10 minutes before serving.
