Ingredients
- 400 g Beef
- 300 g Fish pieces
- 3 Potatoes
- 1 cup cooked Beans
- 2 cups Coconut milk
- 2 Onions
- 1 tbsp Ginger
- 2 cups Greens
How to cook Mchemsho
Mchemsho is a one-pot steamed coastal feast of meat, fish and vegetables together. Served at celebrations and family gatherings. Everything shares one coconut-spice broth.
- Cut meat and potatoes into even pieces.
- In a large pot fry onions and ginger in oil.
- Add meat, toss and cook 10 minutes.
- Add potatoes, beans and a little water; cover and cook 20 minutes.
- Lay fish on top of potatoes — do not stir.
- Pour coconut milk over; reduce heat.
- Cover and steam 25 minutes.
- Add greens at end, cover 5 minutes.
- Season with salt and lime.
- Serve from the pot with rice or ugali.
Tips
- Do not stir after adding fish or it breaks apart.
- Mchemsho needs low heat and patient steaming.
- Potatoes and meat should be nearly done before fish goes in.
