- 4 large Potatoes
- 6 Eggs
- 1 large Onions
- 1 Bell pepper
- 1 cup Cooking oil
- to taste Salt
- 1 tsp Black pepper
- 2 tbsp Coriander
How to cook Chips Mayai
Chipsi mayai is iconic Dar es Salaam street food cooked in a wide pan by zege masters. Cut potatoes and eggs are combined into a thick omelette with chips inside — the zege technique. Eaten at night or morning with tea or soda.
- Wash potatoes, cut into short thick chips; pat dry.
- Heat plenty of oil in a wide pan for shallow frying.
- Fry potato batches until golden and crisp; drain and set aside.
- Dice onion and pepper; in the same pan add oil and fry onion briefly.
- Beat eggs with salt, pepper and coriander in a bowl.
- Return chips to pan in an even layer; pour eggs over — start the zege.
- Let the bottom set on medium heat without stirring too soon.
- When edges firm, cover briefly 5 minutes to set the top.
- Flip the zege with a plate or fold in half; cook second side 5 minutes.
- Cut into wedges in the pan and serve hot with kachumbari or ketchup.
